Stop apologizing about the oil, butter, or cream in your dishes. That’s why Indian food tastes so good in the restaurants. If a home cook makes your recipes without all the good-tasting stuff, then they think there’s something wrong with *your* recipe because the flavor? isn’t the same as the restaurant standard. Maybe say: And go take a walk for dessert instead.

I tried these today. Turned out great! Had been looking for this recipe for ages! Thanks very much
P.S. Just to make it a little more saucy I saute`d 2 diced tomatoes in the oil before adding in? the potatoes. Also added about a tablespoon full of tamarind sauce towards the end.

I made this a few days ago. It turned out really well.
I? took the leftovers I had and put some into samosa wrappers and made ‘samosas’ with it. That was good too.
